Gourmet Warehouse Cooking Class Line Up For 2017

GourmetWarehouseLogoThe Gourmet Warehouse has another great line up of cooking classes for 2017. These classes are a great way to spend an afternoon and meet some like-minded food lovers. We recently did just that with a class led by Caren McSherry featuring holiday appetizers. Not only do you get to taste everything you make, but you leave with amazing recipes and great tips from an expert. Personally, we like the shopping after the cooking class as participants are offered a 10% discount for purchases made the day of your class. PHO-Fabulous – Thursday, March 23rd 6:00 pm ($65)

You are invited to join Chef Thompson Tran to learn the essential techniques for making authentic Pho (PH-UH) broth.  In this cool weather, there is nothing like an aromatic bowl of Pho to warm you up.  The menu Chef Tran has lined up for this class includes:

•  GOI DU-DU VA THIT HEO THOM, Green papaya and cabbage salad prawn and pork
•  PHO BO DAC BIET, Authentic South Vietnamese Pho
•  BANH LOT, a Chestnut Jelly in Ginger Syrup

Asian Bistro – Saturday, March 25th 11:00 am ($65) SOLD OUT

Chef Cindy Low teaches you how to make casual Asian food. Best of all, easy and fast dishes including potstickers, bao (filled steamed buns), Asian sticky chicken and a fav among many we know spicy green beans finished off with mango coconut ice cream.

• Potstickers – Class pork and vegetable dumpling, pan-friend with dipping sauce
• Asian turkey ragu bao – Asian Sloppy Joes in steamed buns
• Indodesian sticky chicken
• Szechuan spicy green beans wok fried with garlic and chili

Sunday Supper: France – Saturday April 8th 11:00 am ($69)

If you want to invite the family or friends for Sunday Supper with a French twist, Chef Cindy Low will teach you the ins and outs of putting on a casually elegant French dinner. Chef Low will teach you how to make a classic lamb stew, an easy spinach and strawberry salad, cherry clafouti and more. Menu for this upcoming class includes:

• Tartine with saute mushrooms in a creamy tarragon sauce

• Spinach salad with fresh strawberries, toasted almonds, raspberry vinaigrette

• Lamb navarin printainere – class lamb stew with spring vegetables

• Roast potatoes with rosemary and sea salt

• Cherry clafouti – baked custard with cherries

Flavours of Morocco – Saturday, January 23rd 11:00 am ($65) SOLD OUT

Chef Cindy Low invites you on a culinary adventure to Morocco. This is home to one of the world’s most intriguing cuisines. You will learn about the countless spices used in their dishes and the combination of sweet and savory that produces some unforgettable dishes. You will learn to make some classic dishes like briouats (filo pies), tajines (stews) and couscous. The menu for this class includes:

  • Briouats – Moroccan spiced beef wrapped in filo pastry
  • Kale salad with carrots, dates, pomegranate-orange vinegrette
  • Chicken Tajine (stew) with preserved lemons and olives
  • Butternut Squash tajine with chickpeas
  • Saffron Cous Cous
  • Chocolate-Mint tea sorbet

David Robertson of “The Dirty Apron” – January 28th 6:00 pm ($75)

Chef David Robertson, Chef and Owner of the Dirty Apron Cooking School, is their celebrity guest chef this season. Chef Robertson is known for making meals effortless. His class focuses on flavour and having attended a cooking class at Dirty Apron, we expect it will be rather fun as well.  The menu he has lined up for this upcoming class includes:

  • Grilled Corn, Double Smoked Bacon & Clam Chowder
  • Carmelized Fennel, Seared Haloumie Cheese with a Pomegranate Reduction
  • Miso Sake Roasted Sablefish
  • Green Thai Curry
  • Frangelico & Red Wine Poached Pear Tart

Game Day – Feeding A Crowd – Saturday,  January 30th ($65)

Are you planning to host a SuperBowl Party this New Year?  Chef Cindy Low will show you how to feed a crowd for game day or for any other occasion where you might be feeding a hungry crowd. Chef Cindy will focus on  delicious and (mostly) make-ahead favourites so you won’t miss all the fun during your party.  The dishes she has lined up for this class include:

  • Pulled chicken sandwiches with homemade barbeque sauce
  • Grilled marinated flank steak (Argentinian style) with chimichurri sauce
  • Turkey chili mole – chili with minced turkey, six varieties of beans and a hint of chocolate
  • Cajun roasted potatoes
  • Tangy coleslaw
  • Chocolate chip ice cream

Marsh&Mallow – Decadent Gourmet Marshmallows

Today we’d like to introduce you to Marsh&Mallow which is the brain child of Carly Bloch.  As the name eludes, Marsh&Mallow makes handmade gourmet marshallows in some amazing decadent flavours.  Added bonus is that they are gluten free.  Carly admits her first attempt at making handmade marshmallows “was an epic fail”. Through trial and error though she has truly mastered the process.  Carly has a career in finance, but needed a creative outlet and loved creating sweet treats and has turned Marsh&Mallow into a successful side business. We hear the special orders are flying in.  And for those itching to place their order, you can purchase Marsh&Mallow through her online store which sets out all the delicious flavours. You will also find her marshmallows in gift baskets being offered by local businesses such as Wantful Gifts and By Broken Arrow. Carly is working on some retail distribution locations and you will soon see her marshmallows in Much & Little on Main Street. But Carly is sticking with her core values which is producing small batches which allows her continue to source products and locally whenever possible.

If you are wondering what her most popular flavour is. We hear it’s her Signature Salted Caramel marshmallow. Carly says “Each batch starts with classic vanilla marshmallows, then salted caramel sauce is swirled right in. The salted caramel sauce is made in house and is the perfect balance of dark and sultry caramelized sugar which is transformed into creamy rich caramel, finished with pink Himalayan sea salt.”   That said, this is one of her best sellers along with Raspberry and Classic Baileys and Cream.  For a limited time during the holiday season, you can order Holiday Mint Chocolate which is a “squishy cool mint marshmallows coated in premium cocoa powder are drizzled with dark chocolate ganache and crushed candy cane.” Sounds like a piece of heaven to us. Prices start at $15.00 per bag for 6 large marshmallows. Personally, we think these would a unique hostess gift this holiday season. We’re just saying. This cooking class sold out in a heart beat when first offered earlier this year. So if you missed it then, now’s your chance to sign up.  Some of the other classes coming up include a Sushi Workshop, Thai Summer and Summer Grilling.  Attending one of these classes, is certainly a fun way to spend an afternoon. Sushi Workshop – Saturday, June 6th 11:00 am ($69)

Chef Cindy Low will take you through this hands on workshop and teach you how to make the vinegared sushi rice, mix wasabi, prepare a variety of fillings. You will also learn how to master sushi rolls, cones and other styles and shapes. Cindy will also pass on some tips on a hosting a do-it-yourself sushi party.  The items that Cindy will be making include:

•           California rolls (crab, avocado, cucumber, rolled “inside out”)
•           Futomaki (thick roll with vegetables, omelet, pickled vegetables)
•           Hoso maki (thin rolls with various fillings)

Now for something on the wild side, we hear that wild meat and game is the fastest growing segment of protein in the supermarkets in North America. For this cooking class, national cooking show host, Chef Garry Steel, of “Wild for the Weekend,” will introduce you to some wild meat and game dishes. Some of the dishes that Chef Garry Steel will be introducing you to include:

•        Wild Boar Chops – make your own grilling rub and seasoning for  grilling
•        Ostrich Burgers – stuffed with stone fruit chutney
•        Alligator Tagine – give your BBQ a special zing with a Moroccan flavor

Flavours of Vietnam – Saturday, July 11th 11:00 am ($59)

Chef Cindy Low will introduce you to Vietnamese cuisine which is one of Southeast Asia’s best kept secrets. The emphasis will be on fresh Asian herbs and vegetables as well as bright seasonings that translate into refreshing, healthy and light cuisine. The dishes she will be making include:

•    Vietnamese salad rolls with prawns, served with a spicy mango dipping sauce
•    Shaking beef with arugula, served banh mi (Vietnamese sandwich) style
•    Chicken pho
•    Stir-fried seasonal Asian greens

Love Thai food? Well Chef Cindy Low will introduce you to the perfect Thai summer menu. You will learn why Thai cookery is one of Asia’s most diverse and complex cuisines. Some of the Thai dishes she will help you add to your repertoire this summer include:

•      Thai salad with tree-ripened papaya, organic greens, toasted coconut, cashews, chili-lime dressing
•      Thai pork sliders – Thai-seasoned mini-burgers with sweet chili aioli

This is a hands-on class hosted by Chef Cindy Low. Delicious Line Up Of Cooking Classes This Fall At Gourmet Warehouse

GourmetWarehouseLogoThe Gourmet Warehouse has a great line up of cooking classes this fall including an extra virgin olive oil tasting class.  If you like olive oil and haven’t participated in something like this, it’s definitely worth the time and the price is right at $10.  It’s hard to imagine the range of flavours until you try a number of them side by side whether grassy, spicy, peppery or one with a neutral flavour which bodes well for baking.  It’s quite something much like wine or beer tasting. Extra Virgin Olive Oil Tasting – Tuesday, October 14th  6:00 pm ($10)

John David Neuman hosts this taste testing and will introduce you to all you need to know about extra virgin olive oil.     You will learn about the different varieties, tips for selecting oil and best of all tasting them side by side.  Class gets under way at 6:00 pm and goes till 7:30 pm. Cost is $10.00.  Registration includes a $10 gift card that is redeemable at The Gourmet Warehouse, along with 10% store wide discount on the evening of the event.

Fall Flavours – Sunday, October 19th 11:00 am ($59)

Chef Celine Turenne shows you how to make dishes that will warm your soul and fill your tummy! Truly comfort foods with some “make ahead” tips so that you can have meals ready in no time. Dishes include:

Taste of Thailand – Saturday, November 15th 11:00 am ($59.99)

Thai cuisine some say is one of the most diverse and complex in Asia as it combines hot, sour, salty, sweet and sometimes bitter flavors.  Chef Cindy Low will help you demystify Thai ingredients such as lemongrass, kaffir lime leaves, fish sauce, chili, palm sugar and lime.  In this demonstration class, you will learn how to make her famous Pad Thai, one of the most popular Thai dishes, as well as other Thai favorites including:

  • Green Papaya Salad with Green Beans, Tomatoes, and Chili Lime Dressing
  • Beef Satays – marinated and grilled beef skewers, served with Spicy Peanut Sauce
  • Pad Thai – Stir Fried Rice Noodles with Prawns, Tofu, Egg, and Bean Sprouts
  • Chicken and Fresh Pineapple in a Red Curry Sauce with Coconut Milk
  • Jasmine Rice

 Asian Tapas – Thursday, November 20th  6:00 pm  ($59)

Small plates and big Asian flavours is the theme of this class.  They will teach  you how to wow your family and friends with delicious and innovative Asian Tapas designed by Chef Cindy Low. Recipes will come from Vietnam, China, India and Korea and include these mouth watering dishes:

  • Vietnamese Salad Rolls with Spicy Peanut Sauce
  • Crab Rangoon – crispy  crab dumplings (plus a vegetarian version) served with dipping sauce
  • Chapchae – Korean yam noodles stir-fried with beef and vegetables
  • Vegetarian Samosa Puffs – the easiest ever! Baked, not fried.
