Gourmet Warehouse Cooking Classes In The New Year

Flavours of Morocco – Saturday, January 23rd 11:00 am ($65) SOLD OUT

Chef Cindy Low invites you on a culinary adventure to Morocco. This is home to one of the world’s most intriguing cuisines. You will learn about the countless spices used in their dishes and the combination of sweet and savory that produces some unforgettable dishes. You will learn to make some classic dishes like briouats (filo pies), tajines (stews) and couscous. The menu for this class includes:

  • Briouats – Moroccan spiced beef wrapped in filo pastry
  • Kale salad with carrots, dates, pomegranate-orange vinegrette
  • Chicken Tajine (stew) with preserved lemons and olives
  • Butternut Squash tajine with chickpeas
  • Saffron Cous Cous
  • Chocolate-Mint tea sorbet

David Robertson of “The Dirty Apron” – January 28th 6:00 pm ($75)

Chef David Robertson, Chef and Owner of the Dirty Apron Cooking School, is their celebrity guest chef this season. Chef Robertson is known for making meals effortless. His class focuses on flavour and having attended a cooking class at Dirty Apron, we expect it will be rather fun as well.  The menu he has lined up for this upcoming class includes:

  • Grilled Corn, Double Smoked Bacon & Clam Chowder
  • Carmelized Fennel, Seared Haloumie Cheese with a Pomegranate Reduction
  • Miso Sake Roasted Sablefish
  • Green Thai Curry
  • Frangelico & Red Wine Poached Pear Tart

Game Day – Feeding A Crowd – Saturday,  January 30th ($65)

Are you planning to host a SuperBowl Party this New Year?  Chef Cindy Low will show you how to feed a crowd for game day or for any other occasion where you might be feeding a hungry crowd. Chef Cindy will focus on  delicious and (mostly) make-ahead favourites so you won’t miss all the fun during your party.  The dishes she has lined up for this class include:

  • Pulled chicken sandwiches with homemade barbeque sauce
  • Grilled marinated flank steak (Argentinian style) with chimichurri sauce
  • Turkey chili mole – chili with minced turkey, six varieties of beans and a hint of chocolate

Cooking Classes: Holiday Entertaining & Sweet Treats To Gift At The Uncommon Cafe

TartineMaplePuffThe Uncommon Café, 477 Powell Street, is hosting some fun cooking classes which will help you with your holiday entertaining and/or gift giving or possibly both.  Valentine Kitamura owner of Tartine Maple will be leading two classes this December.  Valentine was born and raised in France and is a chef that has worked in hotels in Paris, Singapore, New Orleans and Toronto.  She now works with The Uncommon Café, a commissary and café located just across the street from Oppenheimer Park.  This December they are collaborating and offering two cooking classes Holidays Entertaining and Sweet Treats to Gifts.

On December 2nd, the cooking class is all about entertaining for the holidays.  Valentine will show you the endless possibilities of puff pastry. Learn both sweet and savory variations including brie & cranberry squares, palmiers and apple roses to wow your guests.  This is a hands on class and you will get to eat everything that is made during the class. Oh and did we mention, there will be champagne for sipping while you take this class.  You are asked to bring containers so you can take some of creations home, that is if you don’t eat them all. This Holiday Entertaining class is  $60 and runs from 6:00 pm to 9:00 pm.  To register, visit Eventbrite. Register by November 29th and save $10.

On December 16th, learn how to make marshmallows, we are hearing much easier than one might think as well as caramels and truffles. All can be tweaked to individual tastes so you can create your own unique flavours to either give away as gifts or keep for entertaining.  Experience is not required for these classes, but a few items would be handy to make these items at home including a good mixer, a cooking thermostat and baking pans. This is also a hands on class and yes again with champagne!  Don’t forget to bring some containers to take home the treats you’ve made.  The Sweet Treats to Gift class is $60 and also runs from 6:00 pm to 9:00 pm.  To register, visit Eventbrite. Chinese Takeout – Saturday, September 26th 11:00 am ($59)

Chef Cindy Low invites you to come out and learn how to make your favourite Chinese takeout dishes. She will fire up the wok and show you how to make some classic Chinese dishes. You will also learn some tips on making great stir-fries, cooking techniques, shopping and more. Some the items she will teach you how to cook include:

  • Prawn Wontons Soup
  • Lettuce Wraps with Minced Pork and Vegetables
  • Sweet and Sour Chicken with Pineapple
  • Beef with Broccoli

Chef Cindy Low will teach you how to make mouthwatering vegetarian dishes that appeal to vegetarians and non-vegetarians alike. Her inspiration for many of her meatless dishes come from various countries around the world including Turkey, West Africa and Mexico. Some of the dishes you will learn to make include:

  • West African Vegetable and Peanut Stew with Collard Greens

Turkish Kitchen – Saturday, October 24th 11:00 am ($59)

Chef Cindy Low is back in the Gourmet Warehouse kitchen with another culinary adventure this time it’s Turkey. You are invited to come learn how to make some delicious Turkish cuisine. Cindy will also teach you about some of the exotic ingredients ingredients in Turkish cuisine including sumac, pomegranate molasses, yufka (filo) and Aleppo pepper. Some of the dishes you will learn to make include:

  • •Sigara boregi – cheese ‘cigars’ wrapped in filo pastry
    •Muhammara – Turkish red pepper and walnut dip
    •Adana kebab – grilled spiced beef kebabs, served with grilled tomato, peppers, pita
    •Chicken and vegetable bulgur pilaf
    •Turkish coffee ice cream

This cooking class sold out in a heart beat when first offered earlier this year. So if you missed it then, now’s your chance to sign up.  Some of the other classes coming up include a Sushi Workshop, Thai Summer and Summer Grilling.  Attending one of these classes, is certainly a fun way to spend an afternoon. Sushi Workshop – Saturday, June 6th 11:00 am ($69)

Chef Cindy Low will take you through this hands on workshop and teach you how to make the vinegared sushi rice, mix wasabi, prepare a variety of fillings. You will also learn how to master sushi rolls, cones and other styles and shapes. Cindy will also pass on some tips on a hosting a do-it-yourself sushi party.  The items that Cindy will be making include:

•           California rolls (crab, avocado, cucumber, rolled “inside out”)
•           Futomaki (thick roll with vegetables, omelet, pickled vegetables)
•           Hoso maki (thin rolls with various fillings)
•           Inari sushi (stuffed tofu pouches)

Summer Grilling & Fresh Summer Salads – Sunday, June 28th ($59)

Now for something on the wild side, we hear that wild meat and game is the fastest growing segment of protein in the supermarkets in North America. For this cooking class, national cooking show host, Chef Garry Steel, of “Wild for the Weekend,” will introduce you to some wild meat and game dishes. Some of the dishes that Chef Garry Steel will be introducing you to include:

•        Wild Boar Chops – make your own grilling rub and seasoning for  grilling
•        Ostrich Burgers – stuffed with stone fruit chutney
•        Alligator Tagine – give your BBQ a special zing with a Moroccan flavor

Love Thai food? Well Chef Cindy Low will introduce you to the perfect Thai summer menu. You will learn why Thai cookery is one of Asia’s most diverse and complex cuisines. Some of the Thai dishes she will help you add to your repertoire this summer include:

Not to mention, the Mediterrean diet is regarded by many as one of the healthiest in the world.  Some of the delicious dishes Cindy will be preparing include:

•Horiatiki salata (Greek salad) – tomatoes, cucumber, feta, olives, green pepper, oregano,
extra virgin olive oil
•Prawns saganaki – prawns baked with tomatoes and feta
•Chicken souvlaki – tender cubes of chicken breast, marinated and grilled to perfection

Cake Basics – Sunday, April 26th 11:00 am ($59)  

You are invited to join instructor Rick Gaspard for this hands-on class. You can expect to learn the basic techniques required to decorate beautiful cakes for any occasion.  You will also learn the basics of filling and frosting a cake, handling a piping bag and creating beautifully piped borders. As this is a hands-on class, registration is limited to 8 participants so early registration along with an apron is recommended.

Prawn Festival – Saturday, May 9th 11:00 am ($69) SOLD OUT

Well if you love prawns, this is the class for you. This cooking class coincides with the International Prawn Festival and to celebrate Chef Cindy Low will demonstrate how to cook prawns perfectly. Some of the dishes she will be showing you include:

•Prawn and mango amuse bouche

•Prawns with chorizo and garlic, Spanish tapas-style

Gluten Free Baking Demo Class At Gourmet Warehouse March 1st

You are invited to attend a Gluten Free Baking demonstration class on Saturday, March 1st at Gourmet Warehouse, 1340 East Hastings Street.  The class will be led by Pixie Porcellato who is co-founder of Butter Bakery in Vancouver and Cloud 9 Flour. After developing her recipe for gluten- free flour, Pixie helped her son open Cloud 9 Bakery in New Westminster.  Pixie is a seasoned baker with over 50 years baking experience. Although this is a demonstration class, class participants will go home with these goodies: 

  • Cats Head Biscuits
  • Pecan Chiffon Cake
  • Donut Holes

The Gluten Free Baking demonstration class will be held on March 1st from 11:00 a.m. to 2:00 p.m. Cost is $69 per person.  All registrants will receive a 10% storewide discount to use on the day of their class.  Classes tend to fill up quick, so register early if you wish to attend this class. Gourmet Warehouse is offering one more cooking class before the summer break. The focus is on Summer Salads and Starters which will be perfect for entertaining.   You will learn how to make:

· Crisp Tuna Rolls on Thai Salad

· Grilled Basil Lemon Prawns with Chorizo

· Pancetta Wrapped Dates with Compote and Chili

· Red and Black Quinoa Salad with Roasted Vegetables and Hazelnut Vinaigrette
